  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons fresh garlic butter
  • 12 cups shredded cheddar cheese

Instructions

  1. Preheat your non-stick skillet over medium heat.
  2. Squeeze excess moisture from the grated zucchini using a cheesecloth or towel to ensure crispy patties.
  3. In a mixing bowl, combine the drained zucchini with egg, Parmesan cheese, cornstarch, salt, and pepper. Mix until you have a dough-like consistency.
  4. Melt garlic butter in the skillet. Shape half of the mixture into a patty and place it in the skillet; repeat for another patty.
  5. Cook for 3–4 minutes on each side until golden brown and crisp.
  6. Place shredded cheddar on one patty and top it with the second patty to form a sandwich. Cook for an additional 3 minutes until the cheese melts.
  7. Remove from heat, let cool slightly, slice, and serve warm.
