  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean kitchen towels for 15 minutes.
  2. Cut the pressed tofu into 1-inch cubes and coat evenly with cornstarch.
  3. Heat oil in a skillet over medium-high heat, add tofu in a single layer, and cook until golden brown on both sides.
  4. Remove the tofu and sauté bell peppers and onion in the same skillet until caramelized.
  5. Add minced garlic and ginger; cook until fragrant.
  6. Stir in pineapple chunks to caramelize for 2–3 minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the mixture in the skillet along with crispy tofu.
  8. Stir gently until everything is coated and glossy.
