  • 1 1/2 cups all-purpose flour (or gluten-free blend)
  • 1/2 cup vegan butter or margarine (chilled)
  • 6 tablespoons granulated sugar (divided)
  • 45 apples (cored and sliced)
  • 2 teaspoons ground cinnamon
  • Dash of lemon juice (optional)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with vegan butter.
  2. In a mixing bowl, combine flour and 3 tablespoons of sugar. Add chilled vegan butter and mix until crumbly.
  3. Gradually add cold water until the dough forms. Press into the tart pan evenly across the bottom and up the sides.
  4. In another bowl, toss sliced apples with remaining sugar, cinnamon, and flour until well mixed; add lemon juice if desired.
  5. Fill the pastry crust with the apple mixture and drizzle melted vegan butter on top.
  6. Bake for about 70 minutes until apples are tender and lightly golden.
  7. Brush warmed apricot jam over the filling after baking for a glossy finish.
