  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean (seeds scraped)
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. For the crust, mix graham cracker crumbs, sugar, and melted butter in a bowl. Press about 1 tablespoon into each liner.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, heavy cream, vanilla bean seeds, and extract.
  4. Pour the cheesecake batter into each lined crust until about three-quarters full. Bake for 20–25 minutes until just set but slightly jiggly.
  5. Cool to room temperature and refrigerate for at least two hours.
  6. Before serving, sprinkle sugar on top of each cupcake and use a kitchen torch to caramelize until golden.
