  • 500 g butternut squash
  • 4 cloves garlic
  • 1 yellow onion
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan cheese
  • 50 g turkey strips
  • 1 ball of fresh mozzarella
  • 3 sprigs rosemary
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 30 g walnuts
  • 75 ml milk

Instructions

  1. Preheat your oven to 180ºC.
  2. On a baking tray, combine chopped butternut squash, sliced onion, and garlic. Drizzle with olive oil and sprinkle with rosemary.
  3. Roast for about 30 minutes until tender and slightly caramelized.
  4. Blend roasted vegetables in a food processor until smooth.
  5. In a frying pan, cook turkey strips until crispy; set aside.
  6. In the same pan, mix the squash purée with milk and water, then add gnocchi. Simmer for 8–10 minutes until tender.
  7. Stir in parmesan cheese and lemon juice; incorporate half of the turkey strips.
  8. Top with torn mozzarella and broil for about 5 minutes until melted.
  9. Serve garnished with remaining turkey strips and walnuts.
