  • 1.21.4 kg (about 3 lbs) lamb shoulder
  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 5 sprigs rosemary
  • 68 cloves garlic
  • 2/3 cup apple vinegar
  • 1 cup water
  • 4 tablespoons honey

Instructions

  1. Preheat oven to 180°C (356°F).
  2. Remove rosemary needles from sprigs and finely chop. Slice garlic cloves lengthwise.
  3. Score deep cuts across the top of the lamb shoulder. Rub olive oil over the meat and season with salt, pepper, smoked paprika, and chopped rosemary.
  4. Insert garlic pieces into the cuts.
  5. In a roasting pan, combine water and apple vinegar. Place lamb shoulder in the pan and cover tightly with aluminum foil.
  6. Roast for approximately 2 hours and 15 minutes.
  7. Carefully remove foil, drizzle honey over the lamb, and return to the oven uncovered for an additional 30 minutes to caramelize.
  8. Let rest for 5-10 minutes before serving.
