  • 2 lbs boneless chicken thighs
  • 1 ½ tbsp Italian seasoning
  • 4 garlic cloves (minced)
  • ½ cup chicken broth
  • ½ cup chopped sun-dried tomatoes
  • ¼ cup heavy cream
  • ¼ cup freshly grated parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat sun-dried tomato oil in a large skillet over medium heat.
  2. Season chicken thighs with Italian seasoning, salt, and pepper; add to the skillet.
  3. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  4. Sauté minced garlic in the skillet until fragrant (about 1 minute).
  5. Pour in chicken broth, scraping up any browned bits; add sun-dried tomatoes, heavy cream, and parmesan cheese. Whisk until smooth.
  6. Return chicken to skillet, spoon sauce over it, and top with fresh basil before serving.
