  • 4 medium sweet potatoes
  • 2 balls of burrata cheese (about 6 oz each)
  • 1/2 cup toasted walnuts, roughly chopped
  • 1/2 cup fresh sage leaves
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake sweet potatoes on a baking sheet drizzled with olive oil and seasoned with salt and pepper for about 45 minutes or until fork-tender.
  3. Prepare sage pesto by blending fresh sage leaves, toasted nuts, garlic, olive oil, lemon juice, salt, and pepper until smooth.
  4. Once baked, cut sweet potatoes lengthwise and fluff the insides with a fork.
  5. Fill each potato half with burrata cheese and top generously with sage pesto and toasted walnuts.
