  • Salt and pepper, to taste

Instructions

  1. Boil the cubed red potatoes in a large pot of salted water for 10-15 minutes until fork-tender. Drain and cool to room temperature.
  2. In a mixing bowl, combine mayonnaise, sour cream, apple cider vinegar, and Dijon mustard until smooth.
  3. Add cooled potatoes to the dressing along with chopped onion, crumbled turkey bacon, cheddar cheese, parsley, and pickles. Gently mix to combine.
  4. Season with salt and pepper to taste.
