  • 1/2 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 large sweet potatoes
  • 1 tablespoon fresh oregano or basil
  • 1/4 cup extra virgin olive oil
  • 1/4 cup unsalted butter or olive oil for dairy-free
  • 2 tablespoons apple vinegar
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 1/2 cup heavy cream or coconut milk
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Prepare the sweet potatoes: Peel and cut into chunks. Boil in salted water until tender (15-20 minutes).
  2. Cook the steak: Season steaks with salt, pepper, and optional garlic powder. Heat olive oil in a skillet over medium-high heat and cook steaks for about 4-5 minutes on each side for medium-rare.
  3. Make the green sauce: Mix parsley, cilantro, oregano/basil, lemon juice, olive oil, apple vinegar, minced garlic, chili flakes (if using), salt, and pepper in a bowl until well combined.
  4. Mash the sweet potatoes: Drain cooked potatoes and return them to the pot. Add butter or olive oil and cream or coconut milk; mash until smooth. Season with salt, pepper, and cinnamon if desired.
