  • 1 kg carrots, peeled and sliced
  • 1 medium onion
  • 4 cloves garlic
  • 3 cm fresh ginger
  • 1 red chili
  • 3 tbsp miso paste
  • 1.6 L vegetable stock
  • Vegetable oil for roasting
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C / 180°C fan.
  2. Prepare the vegetables by peeling and slicing the carrots, cutting the onion into eighths, smashing the garlic cloves, and slicing the ginger and red chili.
  3. Roast carrot peels in a small tin with salt, pepper, and oil for about 10 minutes until crispy.
  4. In a large roasting tin, combine carrots, onion, garlic, ginger, and chili; season and roast for 35 minutes until tender.
  5. For chili ginger oil, heat oil in a small saucepan; add fresh ginger matchsticks and sliced chili; cook briefly before adding mixed seeds.
  6. Blend roasted vegetables with miso paste and vegetable stock until smooth.
  7. Simmer blended soup over medium heat for about 5 minutes; adjust seasoning as needed.
  8. Serve topped with crispy carrot peels, spring onions, and chili ginger oil.
