Sloppy Joe Bowls are a wholesome twist on a classic comfort food, perfect for busy weeknights or casual gatherings. This quick and easy recipe combines savory ground beef with roasted sweet potatoes for a deliciously satisfying meal. Packed with rich flavors from spices and toppings, these bowls cater to everyone’s taste buds while being nutritious.

  • 1 large sweet potato, cut into 1/4 inch slices
  • 1 tablespoon extra virgin olive oil (sub avocado oil)
  • 1 teaspoon kosher salt
  • 2 tablespoons ghee or olive oil
  • 12 tablespoons garlic, minced
  • 1/4 cup yellow onion, diced
  • 1/4 cup red onion, diced
  • 1/21 green bell pepper, diced
  • 1 pound ground beef
  • 1 teaspoon dijon mustard
  • 1 teaspoon yellow mustard
  • 3 tablespoons paleo ketchup
  • 2 tablespoons coconut aminos
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon apple cider vinegar
  • dijon mustard, for serving
  • sliced pickles, for serving
  • pickled red onions, for serving

Instructions

  1. Preheat the oven to 415°F.
  2. Place your sweet potato slices on a baking sheet. Drizzle with olive oil and massage to coat both sides. Sprinkle with kosher salt. Roast in the oven for 10–12 minutes or until firm but tender.
  3. Meanwhile, heat a cast iron skillet over medium-high heat. Add ghee or oil and swirl to coat. Add minced garlic; sauté until fragrant.
  4. Stir in onions and diced bell pepper; sauté for 2–3 minutes until onions soften.
  5. Add ground beef to the skillet. Cook until browned. Drain excess grease if needed.
  6. Mix in dijon mustard, yellow mustard, paleo ketchup, coconut aminos, kosher salt, black pepper, tomato paste, chili powder, and apple cider vinegar. Stir well to combine all ingredients thoroughly.
  7. If you prefer a saucier mixture, add additional ketchup or tomato paste as desired. Once adjusted, take a few slices of roasted sweet potato and place them in bowls. Top with Sloppy Joe mixture. Finish with sliced pickles, pickled onions, and extra dijon mustard if desired.
