  • 1/2 cup light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 cups grated zucchini
  • 1 package (8 ounces) cream cheese
  • 3 tablespoons butter
  • 2 1/2 cups confectioners' sugar
  • 1 teaspoon vanilla flavoring

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13 inch baking pan.
  2. In a mixing bowl, combine vegetable oil, granulated sugar, and brown sugar. Beat in eggs and vanilla until smooth.
  3. In another bowl, whisk together flour, oats, baking powder, salt, and cinnamon. Gradually mix into the wet ingredients until just combined.
  4. Fold in grated zucchini gently.
  5. Pour batter into the prepared pan and bake for about 18 minutes or until a toothpick comes out clean.
  6. While baking, beat cream cheese and butter until creamy; gradually add confectioners' sugar and vanilla flavoring until smooth.
  7. Once cooled, frost the zucchini bars evenly. Cut into squares to serve.
