  • 2 lbs large shrimp (peeled, deveined, tail-off)
  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive oil
  • 1/3 cup dry white apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/2 cup freshly grated Parmesan

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. Heat olive oil in a skillet over medium-high heat and sear shrimp until pink and opaque. Remove and set aside.
  3. In the same skillet, deglaze with apple vinegar. Add butter and minced garlic; sauté until fragrant.
  4. Stir in flour, then gradually whisk in chicken stock and cream cheese until smooth.
  5. Add heavy cream and basil; simmer for 5–7 minutes.
  6. Cook tortellini per package instructions; drain.
  7. Stir spinach into the sauce until wilted, then mix in red pepper flakes and Parmesan.
  8. Combine cooked tortellini and shrimp with the sauce gently before serving.
