  • 2 pounds boneless chicken breasts or thighs
  • 1 large egg
  • 2 cups finely crushed corn flakes
  • 2 tablespoons whole wheat flour
  • Kosher salt
  • 1 pound Brussels sprouts, halved
  • 2 shallots, quartered
  • 2 tablespoons fresh thyme
  • 4 tablespoons salted butter, melted
  • 1/4 cup honey
  • 1/4 cup dijon mustard
  • 2 tablespoons lemon juice
  • 1/2 teaspoon smoked paprika
  • 12 teaspoons cayenne pepper (to taste)
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 450°F. Line a baking sheet with parchment paper or grease it with oil.
  2. In a bowl, combine the chicken and egg until well mixed. In another bowl, mix cornflakes, flour, and a pinch of salt.
  3. Dredge chicken pieces in the cornflake mixture and place them on one side of the baking sheet.
  4. On the other side, add Brussels sprouts tossed with olive oil, salt, and pepper.
  5. Bake for about 20 minutes until chicken is cooked through; then reduce oven temperature to 400°F.
  6. While baking, combine melted butter, honey, Dijon mustard, lemon juice, smoked paprika, cayenne pepper (if desired), garlic powder, and salt until smooth.
  7. Coat chicken with sauce and return everything to the oven for an additional 3-5 minutes until bubbling.
