  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box corn muffin mix (8.5 ounces)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate zucchini and thoroughly drain it using a clean towel.
  3. In a mixing bowl, combine drained zucchini, chopped onion, half of the cheddar cheese, corn kernels, jalapeño, eggs, and spices. Mix well.
  4. Fold in corn muffin mix until just combined.
  5. Pour the mixture into a greased baking dish and top with remaining cheese.
  6. Bake for approximately 50 minutes until golden brown.
