  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil (for frying)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Dijon mustard
  • 4 large russet potatoes, peeled and cubed
  • ½ cup milk (for mashed potatoes)
  • ¼ cup butter (for mashed potatoes)
  • ¼ cup sour cream (optional, for extra creaminess)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, and pepper until well combined. Form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and fry the meatballs until browned and cooked through (about 7-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté sliced onions until golden brown. Stir in flour and whisk in beef broth along with Dijon mustard. Simmer until thickened.
  4. Return meatballs to the gravy and simmer for an additional 5 minutes.
  5. For mashed potatoes, boil cubed potatoes until tender. Drain and mash with butter, milk, salt, and optional sour cream until smooth.
  6. Serve the mashed potatoes topped with Salisbury meatballs and gravy.
