  • 2 cups cauliflower florets
  • 2 cups cubed butternut squash
  • 2 teaspoons minced fresh rosemary
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 teaspoons extra virgin olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 5 ounces baby kale or spinach
  • 1 pound pizza dough
  • 2 cups shredded Asiago cheese, divided
  • 1/4 cup chopped Kalamata olives

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets and butternut squash with minced rosemary, olive oil, kosher salt, and pepper on a parchment-lined baking sheet. Roast for 25-30 minutes until tender.
  3. Roll out the pizza dough on a floured surface into your desired shape.
  4. Place the dough on a greased baking sheet, brush it with olive oil, then layer with minced garlic, roasted vegetables, baby kale or spinach, half of the Asiago cheese, chopped olives, and crushed red pepper flakes.
  5. Top with the remaining cheese and bake for 15-20 minutes until the crust is golden brown.
