  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound pasta (spaghetti or choice)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse cherry tomatoes and place in a large bowl.
  3. Slice the top off the garlic head to expose cloves.
  4. Drizzle tomatoes with 2 tablespoons olive oil; season with salt, pepper, and red pepper flakes.
  5. Line a baking sheet with parchment paper; spread tomatoes on one side and place garlic cut-side up on the other.
  6. Roast for 25-30 minutes until tomatoes are blistered and garlic is soft.
  7. Cook pasta according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  8. Squeeze roasted garlic into a mixing bowl, add roasted tomatoes, and mash together.
  9. Stir in remaining olive oil, seasonings, and combine with cooked pasta using reserved water as needed.
  10. Fold in basil before serving topped with Parmesan cheese.
