  • 12 oz. pitted Medjool dates
  • 4 oz. goat cheese (softened)
  • 1/3 cup finely chopped walnuts
  • 2 tsp. minced fresh rosemary
  • 1 tsp. orange zest
  • 2 tsp. fresh orange juice
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. sea salt
  • 3 Tbsp. extra-virgin olive oil
  • Optional: Hot honey for garnish

Instructions

  1. Preheat the oven to 375ºF.
  2. Slice each date lengthwise without cutting all the way through and gently open them.
  3. Fill each date with 1 to 2 teaspoons of softened goat cheese.
  4. In a mixing bowl, combine walnuts, rosemary, orange zest and juice, cinnamon, salt, and olive oil; mix well.
  5. Spoon the walnut mixture over each stuffed date.
  6. Bake for about 15 minutes until golden brown.
  7. Let cool for 5 minutes before serving; drizzle with hot honey if desired.
