Ingredients

Scale
  • 8 slices sourdough bread
  • 1 pound thinly sliced roast beef
  • 8 slices sharp cheddar cheese
  • 4 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh arugula or spinach (optional, for garnish)

Instructions

  1. Preheat a large non-stick skillet over medium heat.
  2. Spread 1 tablespoon of butter on one side of each slice of bread.
  3. Place a slice of bread butter-side down in the skillet.
  4. If using, spread Dijon mustard on the unbuttered side, then layer roast beef followed by cheddar cheese on top.
  5. Top with another slice of bread, buttered side facing up.
  6. Cook for 3-5 minutes until golden brown and cheese begins to melt. Flip carefully with a spatula and cook the other side for an additional 3-5 minutes.
  7. Ensure both sides are golden brown; remove from skillet and let cool slightly before serving.
