  • Zest of 1 lemon
  • ½ cup raspberry jam or preserves
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Fresh raspberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar in a large bowl until light and fluffy. Beat in the eggs one at a time, then add vanilla extract and lemon zest.
  4. Alternate adding dry ingredients with buttermilk to the butter mixture until just combined.
  5. Fill cupcake liners about two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  6. Fill cooled cupcakes with raspberry jam and lemon curd using a knife or corer.
  7. For frosting, beat butter until smooth; gradually add powdered sugar, vanilla extract, and cream until desired consistency is reached.
  8. Frost each cupcake and garnish with fresh raspberries.
