  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent. Stir in garlic, celery, and carrot; cook for an additional 5 minutes.
  2. Pour in vegetable broth and add rinsed quinoa. Bring to a boil over high heat.
  3. Reduce heat to low and stir in corn kernels and coconut milk along with smoked paprika and thyme. Season with salt and pepper.
  4. Simmer for about 20 minutes or until quinoa is fully cooked, stirring occasionally.
  5. Serve warm, garnished with fresh parsley.
