Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix melted butter, pumpkin puree, white sugar, egg, and vanilla until smooth.
  3. Gradually add all-purpose flour, pumpkin pie spice, baking powder, and salt; mix until a dough forms.
  4. Chill dough in the refrigerator for 25 minutes.
  5. Shape into balls (1 ½ – 2 tablespoons each) and place on a parchment-lined baking sheet.
  6. Bake for about 18 minutes or until lightly golden.
  7. For frosting: Beat softened cream cheese and unsalted butter until smooth; gradually add powdered sugar and vanilla extract.
  8. Frost cooled cookies and sprinkle with additional pumpkin pie spice if desired.
