  • 1 tbsp pumpkin pie spice
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp unsalted butter, softened
  • 1 1/2 cups granulated white sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk, at room temperature
  • 1 cup canned pumpkin puree, at room temperature
  • 1/4 cup espresso or strong coffee
  • 1/3 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, cold
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 2 tsp instant espresso powder
  • 1 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. In one bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy; add eggs and vanilla and mix well.
  4. Combine buttermilk and pumpkin puree in a separate bowl before gradually mixing into the butter mixture along with dry ingredients.
  5. Bake for about 38 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the soak mixture of espresso, milk, condensed milk, pumpkin pie spice, and vanilla; poke holes in the cake and pour over the soak.
  7. For frosting, beat together softened butter and cream cheese; gradually add powdered sugar, espresso powder, and pumpkin pie spice until fluffy.
  8. Once cooled completely, frost the cake and enjoy!
