  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups freshly grated mozzarella cheese
  • 4 sweet onions
  • 6 slices chicken or turkey bacon
  • Fresh sage leaves
  • ½ cup apple cider

Instructions

  1. Preheat your oven to 400°F (200°C). Thaw the puff pastry and roll out slightly on a floured surface. Place on parchment-lined baking sheets, scoring a 1-inch border.
  2. In a large skillet over medium heat, cook chopped chicken or turkey bacon until crispy, then set aside on paper towels.
  3. In the same skillet, add sliced onions with salt and pepper; caramelize over medium-low heat for about 30 minutes until golden. Add apple cider and cook for an additional 5 minutes.
  4. In a bowl, mix ricotta cheese and pumpkin purée; season with salt and pepper. Spread this filling within the pastry borders and top with caramelized onions, mozzarella cheese, and cooked bacon.
  5. Sprinkle fresh sage over the top and brush pastry edges with an egg wash (beaten eggs mixed with water). Bake for 25–30 minutes or until golden brown.
