  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (topping)
  • 1/2 cup brown sugar (topping)
  • 1/4 teaspoon ground cinnamon (topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until well combined.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined. Pour into the greased casserole dish.
  5. In a separate bowl, mix granulated sugar, brown sugar, ground cinnamon, and chopped pecans for the topping. Sprinkle over the batter.
  6. Carefully pour hot water over the topping without mixing.
  7. Bake for 40 minutes until the center is set.
