  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice

  • 3/4 teaspoon baking powder

  • 1 large egg (at room temperature)
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin or pumpkin puree
  • 1¼ cups powdered sugar for glaze
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon for glaze

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, mix all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Combine the wet and dry ingredients gently until just mixed; do not overmix.
  5. Fill the donut pan cavities halfway with batter using a piping bag.
  6. Bake for 6–7 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack while preparing the glaze by whisking powdered sugar, maple syrup, dark corn syrup, water, and ground cinnamon until smooth.
  8. Dip cooled donuts in the glaze and let set.
