Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 baking dish with olive or avocado oil.
  2. In a bowl, combine rolled oats, pumpkin spice, baking powder, and salt.
  3. In another bowl, mix pumpkin puree, almond milk, eggs (or flax eggs), vanilla extract, and maple syrup until well combined.
  4. Stir the wet ingredients into the dry mixture until just blended.
