  • 2 ½ lb beef tenderloins
  • 1 ½ tbsp avocado oil
  • ¼ cup yellow onion (thinly sliced)
  • ⅓ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 3 large peaches (pitted, peeled, and diced)
  • Fresh rosemary (minced)
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F. Heat avocado oil in a cast iron skillet over high heat. Season the beef with salt and pepper.
  2. Sear the beef tenderloin on all sides for about 3–4 minutes until browned. Remove from skillet and set aside.
  3. In the same skillet, sauté the onions and rosemary until golden, about 1 minute.
  4. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches. Stir to combine and remove from heat.
  5. Place the seared beef back into the skillet with the peach glaze and bake for approximately 10 minutes or until it reaches an internal temperature of 145°F.
  6. Let the beef rest for 5–10 minutes before slicing and serving topped with peach glaze.
