  • ¾ cup granulated sugar (½ cup granulated + ¼ cup brown sugar)
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh or canned)
  • For the streusel topping: ½ cup all-purpose flour
  • ⅓ cup brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter, cut into small cubes

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 or 9×9-inch baking pan.
  2. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly; chill.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream softened butter with granulated and brown sugars until fluffy.
  5. Beat in eggs one at a time; then mix in sour cream and vanilla until smooth.
  6. Gradually add dry ingredients to wet mixture until combined; gently fold in peaches.
  7. Spread batter in prepared pan and top with streusel without pressing down.
