Parmesan Roasted Potatoes are a delightful side dish that combines the best of both worlds: a crispy exterior and a creamy center. This easy recipe transforms simple red potatoes into a savory masterpiece, accentuated by the rich flavor of Parmesan cheese and aromatic herbs.

  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lbs red potatoes (washed)
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with the butter in a 9×13 baking pan until melted.
  2. Cut the washed red potatoes in half and score each half with shallow cuts.
  3. In a mixing bowl, combine Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Spread the seasoning mixture on the bottom of the pan; place cut-side down potatoes over it.
  5. Spray tops with nonstick cooking spray and sprinkle remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until golden brown and tender.
