  • 4 (6 oz) skinless salmon fillets
  • Salt and freshly ground black pepper
  • 2 cloves garlic (minced)
  • 2 1/2 tsp minced fresh rosemary
  • 5 Tbsp chicken broth (divided)
  • 1 1/2 tsp orange zest
  • 2/3 cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 1/2 Tbsp honey
  • 2 1/2 tsp cornstarch

Instructions

  1. Heat olive oil in a non-stick skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper, then add them to the pan. Cook for about 3-4 minutes per side until golden brown and cooked through. Transfer to a plate.
  3. In the same pan, sauté minced garlic and rosemary until fragrant, about 20 seconds.
  4. Pour in 1/4 cup chicken broth and let it simmer until reduced.
  5. Stir in orange zest, orange juice, lemon juice, and honey. Combine remaining chicken broth with cornstarch in a small bowl, whisk until smooth.
  6. Add the cornstarch mixture to the pan, season with salt and pepper, and bring to a boil for one minute while stirring constantly.
  7. Return salmon to the pan, spoon sauce over each fillet before serving.
