  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, garlic powder, onion powder, chili powder, cumin, salt, and pepper; sauté for 5-6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel; toast for 1-2 minutes.
  3. Pour in chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  4. Stir in nacho cheese sauce and 1 cup of shredded cheese until melted and creamy.
  5. Turn off heat, sprinkle remaining cheese on top, cover for 5 minutes until melted. Garnish as desired.
