  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup all-purpose flour (for cookie layer)
  • 1 tsp cornstarch (for cookie layer)
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 cup unsalted butter (room temperature, for cookie layer)
  • 1/3 cup brown sugar (packed light or dark, for cookie layer)
  • 1/8 cup white granulated sugar (for cookie layer)
  • 1/4 cup peanut butter (creamy, for cookie layer)
  • 1 tsp pure vanilla extract (for cookie layer)
  • 1 large egg (room temperature, for cookie layer)
  • 1/2 cup quick oats (for cookie layer)
  • 1/2 cup mini chocolate chips (for cookie layer)
  • 1/2 cup mini M&M's (for cookie layer)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together sugar, eggs, melted butter, oil, and vanilla until smooth. Combine dry ingredients (flour, cocoa powder, cornstarch, salt) and fold into the wet mixture.
  3. Spread brownie batter evenly in the prepared pan.
  4. In another bowl, mix together flour, cornstarch, baking soda, baking powder, and salt; set aside. Cream butter, brown sugar, white sugar, peanut butter, and vanilla until light. Mix in egg and combine dry ingredients before adding oats and chocolate chips.
  5. Spoon monster cookie batter over the brownie layer and gently spread it out.
  6. Bake for about 40 minutes or until a toothpick comes out mostly clean. Allow cooling before cutting into bars.
