  • 1 cup quinoa
  • 1 ½ cups water
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • ½ cup fresh parsley, chopped
  • Juice of 1 lemon (about 3 tbsp)
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a medium saucepan, combine rinsed quinoa with water. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until the water is absorbed.
  3. While the quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, slice red onion, and chop parsley.
  4. In a bowl or jar, whisk together lemon juice, olive oil, salt, and pepper for the dressing.
  5. Once quinoa has cooled slightly, fluff it with a fork in a large mixing bowl. Add the prepared vegetables and toss gently.
  6. Stir in Kalamata olives and drizzle dressing over the salad while tossing lightly until combined.
