  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • Fresh parsley and dill for garnish
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Season the fish fillets with salt, black pepper, and dried oregano on both sides.
  4. In a skillet over medium heat, heat olive oil and sauté onions until translucent. Add bell pepper and zucchini; cook until tender. Stir in minced garlic for an additional minute.
