  • 1 teaspoon avocado oil
  • ½ pound ground turkey
  • ½ small onion (chopped)
  • ½ bell pepper (chopped)
  • ½ cup sliced mushrooms
  • 1 cup roughly chopped fresh spinach
  • 8 large eggs
  • ¼ cup cottage cheese or Greek yogurt
  • ½ cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a heavy-duty pan over medium-high heat, heat the avocado oil. Sauté ground turkey, onion, bell pepper, and mushrooms for 3-4 minutes until softened. Stir in spinach until wilted.
  3. In a mixing bowl, whisk together eggs, cottage cheese (or Greek yogurt), cheddar cheese, garlic powder, paprika, salt, and pepper. Add the sautéed vegetable mixture; combine well.
  4. Grease muffin tins or a casserole dish and pour the mixture evenly into each cup or dish.
  5. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool at room temperature before storing in the refrigerator for up to five days.
