  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • ½ cup lemon curd
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until smooth. Add the egg, lemon zest, and vanilla extract; mix until combined.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually incorporate into the wet mixture until just blended.
  4. Scoop tablespoon-sized dough onto the prepared baking sheet, making indentations for the lemon curd filling in each.
  5. Fill each indentation with about one teaspoon of lemon curd.
  6. Bake for 12–15 minutes or until edges are lightly golden. Remove from the oven and sprinkle each cookie with granulated sugar.
  7. Use a kitchen torch to caramelize the sugar topping until golden brown. Let cool on a wire rack before serving.
