  • 1 1/2 lbs. boneless skinless chicken thighs
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)

Instructions

  1. Cut chicken into 1 1/2" cubes and toss in a bowl.
  2. In another bowl, whisk together ginger, garlic, soy sauce, brown sugar, sesame oil, rice vinegar, and gochujang until combined.
  3. Pour half the marinade over the chicken and mix well to coat. Cover and refrigerate for at least 4 hours or overnight.
  4. Thread marinated chicken onto skewers.
  5. Preheat grill to medium heat and lightly oil grates.
  6. Grill skewers for about 20-30 minutes, turning every 3-4 minutes until cooked through (internal temp reaches 165°F). Baste with remaining marinade during the last few minutes of grilling.
  7. Serve hot with chopped green onions as optional garnish.
