  • 8 large eggs
  • 3 stalks green onions, chopped
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¾ pound cooked turkey sausage, diced
  • 6 English muffins, diced
  • ½ teaspoon ground paprika
  • 1 cup milk (for Hollandaise sauce)
  • 1 package Hollandaise sauce mix
  • ¼ cup butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together milk, eggs, green onions, onion powder, and salt until combined.
  3. Layer half of the turkey sausage in the baking dish followed by half of the English muffins. Repeat with remaining meat and muffins.
  4. Pour the egg mixture evenly over the layered ingredients.
  5. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  6. Bake covered with foil for 30 minutes then remove foil and bake for an additional 15 minutes until set.
  7. Prepare Hollandaise sauce by whisking together milk and sauce mix in a saucepan over medium heat. Add butter and cook until thickened.
  8. Serve warm with Hollandaise sauce drizzled on top.
