  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 2 cups fresh spinach (or kale)
  • 1 cup small pasta (like ditalini or orzo)

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides for about 5 minutes; set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened (about 5-7 minutes). Add garlic and cook for another minute.
  4. Stir in crushed tomatoes and broth along with basil and oregano. Bring to a simmer.
  5. Return meatballs to the pot and simmer for 15-20 minutes until cooked through.
  6. Add spinach (or kale) and pasta; cook until pasta is al dente (around 8-10 minutes). Adjust seasoning if needed.
  7. Serve hot with optional garnishes like extra Parmesan cheese and parsley.
