  • 1/2 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt
  • 1 tsp red pepper flakes
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a mixing bowl, combine ground beef, bread crumbs, grated parmesan, egg, minced onion, minced garlic, parsley, basil, crushed red pepper flakes, salt, and black pepper. Mix until fully combined and form into small meatballs about 1 inch in diameter.
  2. Heat olive oil in a large pot over medium heat. Add the meatballs in batches and cook until browned on all sides. Remove them from the pot and set aside.
  3. In the same pot, add diced onions and carrots; sauté for about 5 minutes until softened. Stir in diced tomatoes and minced garlic; cook for another 3 minutes.
  4. Add water and beef stock; bring to a boil. Stir in tomato paste along with salt, red pepper flakes, parsley, basil, and oregano.
  5. Return meatballs to the pot and reduce heat; simmer for about 20 minutes so flavors meld.
  6. Add gnocchi; follow package directions if using store-bought; usually cooked until they float.
  7. Ladle soup into bowls and garnish with fresh grated or shaved parmesan cheese before serving warm.
