  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions

  1. In a medium bowl, combine honey, olive oil, apple vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper. Whisk until blended.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes (preferably up to 4 hours).
  3. Preheat your oven to 400°F (200°C). Remove chicken from marinade and discard the marinade. Arrange chicken in a baking dish.
  4. In a small bowl, mix crumbled feta with a drizzle of olive oil and season lightly with salt and pepper.
  5. Spoon the feta mixture evenly over each chicken breast.
  6. Bake for 25 to 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the feta is golden.
  7. Let the chicken rest for about 5 minutes before serving with lemon wedges and garnished with parsley.
