  • 1 1/2 cups unsalted butter, melted
  • 2 cups shelled pistachios, roughly chopped
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon, optional
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3/4 cup honey
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp orange blossom water, optional

Instructions

  1. Prepare the honey syrup by simmering honey, water, sugar, and lemon juice in a saucepan for about 10 minutes. Let it cool.
  2. Preheat your oven to 325°F (160°C) and line a 9-inch springform pan.
  3. Layer about 10-12 sheets of buttered phyllo dough in the pan, then sprinkle with chopped pistachios and sugar.
  4. Beat softened cream cheese with sugar until smooth, then mix in eggs one at a time followed by sour cream.
  5. Pour the cheesecake filling over the phyllo layer and top with another set of buttered phyllo sheets.
  6. Bake for 60-70 minutes until set. Cool completely before refrigerating for at least four hours or overnight.
  7. Drizzle cooled honey syrup before serving.
