Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk, as needed for texture (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms.
  5. Roll the dough into 1-inch balls, shape them into ovals, press with a fork for a crosshatch pattern, and sprinkle with sugar.
  6. Bake for 8–10 minutes until golden; cool on wire racks.
  7. For the filling, beat creamy peanut butter and softened butter together; gradually add powdered sugar and adjust texture with milk.
  8. Spread filling between two cooled cookies to make sandwiches.
