  • Cajun seasoning mix
  • 2 Tsp olive oil
  • 25 g grass-fed butter for cooking
  • 1 medium red onion, chopped
  • 45 garlic cloves, chopped
  • 250 ml milk
  • 150 g light cream cheese
  • 40 g Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Marinate chicken breast pieces in Cajun seasoning and olive oil overnight.
  2. Heat a skillet over medium-high heat. Add grass-fed butter and cook marinated chicken until golden brown; let rest before slicing.
  3. In the same skillet, sauté chopped red onion and garlic until fragrant. Add remaining Cajun seasoning and any leftover rice, stirring until coated.
  4. Lower heat, melt more butter, whisk in milk, then add cream cheese and Parmesan until smooth.
