  • 45 medium organic russet potatoes, peeled and cubed
  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 1 cup kale (optional)
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 2 Tbsps white cooking apple vinegar (or veggie stock)
  • 4 cups organic vegetable stock/broth
  • 1 cup organic heavy cream (or coconut/cashew cream)
  • 12 cups freshly grated sharp cheddar cheese (or dairy-free alternative)

Instructions

  1. Prepare the vegetables by washing and peeling the potatoes. Cube them into bite-sized pieces and chop the red onion.
  2. In a pan over medium heat, add olive oil and butter. Once melted, sauté the onions until translucent, then stir in minced garlic until fragrant.
  3. Transfer the sautéed mixture to a slow cooker. Add cubed potatoes, seasoning blends, vegetable stock/broth, and vinegar.
  4. Set the slow cooker on low and cook for about 4-5 hours (or high for 2-3 hours) until potatoes are tender.
  5. Stir in heavy cream and grated cheddar cheese until melted and well combined.
  6. If desired, stir in chopped kale just before serving to wilt.
