  • 28 ounces canned diced tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat and brown the Italian sausage for about 5-7 minutes.
  2. Remove the sausage and sauté onions, garlic, carrots, and celery in the same pot until soft.
  3. Add oregano and basil; cook for an additional minute.
  4. Stir in diced tomatoes, chicken broth, and water; bring to a simmer.
  5. Return sausage to the pot; let simmer for about 20 minutes.
  6. Add ditalini pasta; cook until al dente (10-12 minutes).
  7. Stir in heavy cream and fresh spinach; cook until spinach wilts (3-4 minutes).
  8. Season with salt and pepper before serving.
