  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut chicken breast into small pieces and mix with olive oil and spice blend in a bowl to marinate.
  3. Spread marinated chicken on a parchment-lined baking sheet and bake for 20–25 minutes until golden brown.
  4. Cook quinoa according to package instructions and set aside.
  5. Chop cucumbers, tomatoes, red onion; roughly chop parsley and cilantro.
  6. Whisk together tahini dressing ingredients until smooth.
  7. Assemble the bowl starting with quinoa as the base; add veggies and baked chicken on top before drizzling with tahini dressing.
